Course Salad

Ingredients

Dressing

  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano

Salad

  • 1 head romaine lettuce, rinsed, dried, and chopped
  • 1 cup cherry or grape tomatoes, halved
  • 1 cucumber, partially peeled and sliced
  • ½ green bell pepper, cored and sliced
  • ¼ red onion, sliced
  • 1 cup canned chikpeas, rinsed and drained
  • ½ cup feta cheese

Instructions

  • Prepare salad ingredients and combine in a large bowl. Combine ingredients for dressing in a small jar, and shake well. Pour dressing over salad just before serving. Enjoy!
