Although the exact details are controversial, the pina colada was created in San Juan, Puerto Rico sometime in the 1950s-60s and it is said to have captured the essence of Puerto Rico with it’s stunning blue Caribbean shores. I think for this reason it’s the quintessential beach cocktail. Can you imagine sitting on a beach and not enjoying a pina colada? I can’t!

This drink is perfect because it’s also delicious as a mocktail, so everyone can enjoy it, even if underage or expecting. I recall having more than one of these on vacation while lounging by the pool in my teens! It’s creamy, coconut-y, tropical ice cream in a glass.

  4. My grandma’s recipe card calls for 4 oz coconut cream, 4 oz pineapple juice, and 3 oz rum. This would certainly make a stronger drink! Traditionally it is a 5:5:3 ratio, but feel free to measure with your heart.

Ingredients
  

  • 5 oz coconut cream
  • 5 oz pineapple juice
  • 3 oz rum
  • 1-2 cups ice crushed

Instructions
 

  • In a blender, combine coconut cream, pineapple juice, rum, and crushed ice. Blend well until smooth.
  • Pour into a chilled glass. Garnish with pineapple and cherry.
  • Alternatively, the drink can be served over ice by adding the ingredients to a cocktail glass without blending. Garnish and serve.
