Apricot Pie

While watching instagram stories, I saw someone make the most beautiful apricot pie. Just looking at this video made my mouth water even though I had never had such a thing as an apricot pie before. I was dying to have one, so I quickly picked up some ingredients to make my own.

I wasn’t really sure what to do or how to make it since I didn’t have a recipe anywhere. I really just winged it, and in the end I kind of just threw some apricots into a pre-made organic pie crust (I’m channeling Ina Garden here — store bought is fine!) And you know what? It was the best recipe of the summer.

It’s the perfect summer snack to indulge your sweet tooth. The fresh apricot pairs perfectly with a crumbly, buttery crust!

Apricot Pie

Ingredients

  • 1 store-bought pie crust
  • 6-7 apricots

Instructions

  • Pre-bake the crust as directed by the packaging. Wash and thinly slice the apricots. Arrange apricot slices in a spiral around the pie crust. Bake pie at 350°F for 20-30 minutes, or until the smell of cooked apricots wafts through the house. The pie is good both hot out of the oven and cold after being stored in the refrigerator.
